Chianti originally came from a region in Italy, also known as a region called Chianti Classico - same name as the popular wine, and named
for the area. It is usually made with a variety of grapes, predominantly Trebbiano and Malvasia,
but also may be made with only 100% sangiovese grapes. Less white grapes
are used now than used to be. There are U.S. wines called Chianti, most notably bottled in the round basket covered bottles, which
are popular as candle holders once emptied. Chianti is relatively inexpensive, and often served with American-Italian type meals. It
is a deep, full flavored red wine, somewhat dry. It goes down easily, no bite.
Riserva on the label indicates the wine is of superior quality, and was aged in oak for at least 38 months.
Superiore has more requirements - lower yield, higher alcohol content and dry extract).

Cheese and Wine Combinations that Work. Cheeses most often work best with white wines, rather than red, although some
very strong cheeses may go well with red. The milder, fruity, and also sweeter wines, (also sparkling wines) go well with most
cheeses. Use older and mellow wines with milder cheese. Softer and lighter wines go well with creamy type cheeses. Then again,
if you have a preference, that is what works well for you. Bring along a nice apple and eat that as well - cheese on the
apple, or a bite of cheese followed by wine and a then a slice of apple - wonderful!
