There are lots of shortcuts to use, and ways to do things that will make cooking better and easier. Keep reading and come back for more.
To melt butter in a microwave, place butter in a small microwave-safe dish, and cover with a microwave safe cover to keep
from splattering. Don't use a plastic wrap (gives off chemicals into your food) - wax paper is good (some papers have flicks
of metal which isn't good for a microwave). Start with a low power, and microwave for about 5-10 seconds first, then
only 5 seconds at a time - microwave 5 seconds, then
stop, another 5 seconds, etc. Be patient - if the butter gets too hot it will explode and you'll lose some, plus have a
mess to clean up.
Let beans soak before cooking or boiling them - they will tend to be less gassy. Just drain the soaking water before cooking.
Soak overnight or at least several hours.
Whe using a microwave to boil water or some liquid, let it sit for several seconds before putting anything in it (a spoon, a
teabag, etc). The water will tend to "explode" out of the mug or container if the water is very hot, and it can scald you.
To correct overly salted boiled food, place a raw potato into the water or broth - the potato will soak up salt from the water.
Bake cookies using real butter - margarine just doesn't give it the same richness or consistency - butter makes magic in the
oven.
Keep brown sugar in an airtight container when you bring it from the store - and for any you have that is hardened,
put it on a plate and microwave it or put it in an oven for a minute or more, depending on how hard it is - then use it
right away.
When you are boiling something in a pot with the pot lid on, and the lid bounces up and spits whatever you're boiling out
all over your stove, or boils over, just put a wooden toothpick between the pot and the lid to let it vent, and turn down
the temperature control. That should take care of the mess.
Keep a small bowl or open container of baking soda in the refrigerator to absorb the odors in the fridge before
your food picks up the odors.
Keep certain foods around that you can easily make a meal with - keep these in your kitchen pretty much all the time, with
variations according to what foods you normally eat (you might prefer certain pasta types to rice, etc.).
canola and olive oil
fresh onion, garlic
salt, pepper
spices (dry - buy fresh right before you use them) - powdered garlic, cinnamon, thyme, bay leaves, oregano, poultry seasoning,
dry parsley, rosemary, sage, paprika, nutmeg, dill weed, cilantro, chives, chili powder,
Cajun seasoning. Add more of your favorites, but with the prior list you can create so many dishes.
eggs
butter, milk
lemon juice, lime juice
baking soda and baking powder
white or brown rice, pasta
canned tomato sauce and paste
chicken and beef broth
sugar, brown sugar, powdered sugar, flour (some unbleached white - also whole wheat and others you would use)
