Use good-tasting water for your coffees and teas -
they will taste better - if your tap water tastes bad, buy water or filter water.
How do you like your coffee? Strong, weak, well-rounded, flavored? You have many choices. For stronger
coffee, use a dark roast (more darkly roasted coffees tend to lose their original distinct flavor by the roasted flavor
over-powering it), and let it steep longer if you have that option. For weaker coffee, use a lighter
roast bean (Java, Kenya, Hawaiian Kona, and Jamaican Blue Mountain typically are roasted lighter to maintain
their signature flavors - and they taste wonderful) and don't steep very long.
For flavors, you can add your own, such as liqueur, cinnamon, nutmeg, chocolate
shavings, fruit juices, syrup, etc. Or you can buy beans that have almonds or other flavors ground in with the beans, and some
coffee shops spray flavored oils onto the beans, or add syrups to the coffee.
Coffee may have health benefits - when consumed in moderation.
Coffee is a good source of antioxidants - they protect your body from disease. The shear amount of coffee consumed
gets these antioxidants into our systems. Coffee ranks above black tea and bananas due to the amount consumed.
Drink a cup of coffee a day, or 2-3. Spread the cups out over the day so you keep antioxidants going into your
system, and not get overly caffeinated in one shot (not a good thing - it can raise your blood pressure).
Coffee may even have cancer fighting properties. New research shows that coffee may lower a person's risk for diabetes
(this may be for those drinking 6 or more cups of coffee per day).
However - do not drink coffee if you are trying to have a baby, and not while pregnant.
How to prepare your coffee? You can buy the beans, and grind them yourself as you make your coffee.
This can give you the freshest coffee, as long as the coffee beans aren't very old. Some people prefer to store the
whole beans in the freezer, in an air-tight container. This is good for keeping beans for a longer time. Otherwise,
you can just keep them in the cupboard at room temperature in an air-tight container. You can also buy the coffee
already ground - make sure you get the right type of grind for your coffee system. You will then decide if you
want an automatic coffee maker to brew your coffee, or a manual drip-through system - this is what many coffee
connoisseurs prefer. Oh, yes - use good water (no foul flavor - if tap tastes bad, use filtered or bottled
water), and don't actually boil it to a rolling boil, just
let it start boiling and then pour through a filter (either replaceable filters or
use a gold one over and over) with ground beans if you prefer the manual method. Heat your water in a glass or ceramic

How to make the perfect cup of tea. First, you need to use good water which has no other taste to it. Filtered or spring or
good tap water works. Boil it, preferably in a glass or ceramic pot or tea maker, or even using a
French press, and then get the water to just boiling. Take it
off the heat and pour into your tea cup or mug (or in the case of a teapot, add the tea),
which already has your tea bag or loose tea in a tea strainer (or infuser) - you might want to pour a bit of water into your empty
mug first, to warm it up, then add the tea. Let it steep for
only 45 seconds (very weak, or for Chinese tea) to 5 minutes (although some teas, such as oolong or black, may steep a bit longer) -
don't leave it in for longer or you chance the tea getting bitter. For stronger tea,
use more loose or tea bags, and let it steep a longer amount of time. For iced tea - place ice in a glass and pour the tea in
it - you should use stronger tea for iced tea, because the ice melts and dilutes the tea.
Prefer sun tea? I make sun tea all summer long. Fill a glass jar (there are big jars with pouring spouts made
just for sun tea). Put tea bags or loose tea into it - I use 5 bags of tea per gallon of water. It does depend on the
type of tea you use - some brew stronger, some weaker. Experiment and figure out what you like. I also like to
toss in a few fresh sprigs of mint leaves in. Let it steep in the sun for several hours - I let it go for a minimum of
4 hours up to about 8 or 10, depending on when I remember to bring it in. Take the tea and mint out and put into the refrigerator.
Then enjoy!

What about hot cocoa (hot chocolate)? For better cocoa, use warmed milk (don't boil it to a rolling boil, but do get it
hot - don't scald it), or you can use powdered milk added to water , but it won't taste as good as fresh milk. Put your
cocoa mix into the mug (the amount depends on the mix you use, and you can still add more if the cocoa doesn't
taste strong enough), then pour the milk or water in, and stir. You can add a few drops of vanilla, or a vanilla bean for
effect and flvor. Top it with some tiny marshmallows or whipped cream, if
you wish.
